Cooking with TAY: Muffins that Taste like Doughnuts...?

About a month ago, Swansie sent me a recipe for some muffins that tasted like doughnuts. It piqued my interest, but, I kinda forgot about them, until last week...

...Last Thursday to be more specific, I noticed that a new doughnut shop had opened in the strip mall five minutes away from home. Being a doughnut enthusiast, I decided to buy a half dozen box, only to realize I wasn't carrying my wallet, a sad Nach was sad :( Anyway, that same night while talking to some friends about food I recalled this recipe, and decided to actually give it a try.

To prepare the muffins you'll need:

  • 1-¾ cup Flour (I used self-rising flour for extra fluffiness)
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Salt
  • ½ teaspoons Nutmeg (and an extra pinch, but not too much cause I don't want to poison myself)
  • ½ teaspoons Cinnamon (see note at Nutmeg)
  • 1 Vanilla Bean
  • ⅓ cups Oil (corn oil, or canola oil)
  • ¾ cups White Sugar
  • 1 whole Egg
  • ¾ cups Milk

Traditionally, my first step is always set up the area and prepare the ingredients. With everything ready and measured, it's time to start preparing the batter.

Flour, salt, baking powder and the three spices sifted to avoid those nasty lumps. I didn't have ground nutmeg, so I prepared my own from a nutmeg seed I had lying around.

In a different bowl, mixed the sugar, milk, oil and the egg together.

Little by little I folded the dry ingredients into the milk-egg mix until I got a thick homogeneous batter.

I didn't have my muffin pan, instead I had to go to the supermarket and buy one of those disposable (reusable in my case) pans. They didn't have muffin sized ones though T.T

Bake them at 350F for 15 to 20 minutes... or until golden crisp :3

Just like a doughnut, toppings are essential to keep them from becoming the same boring cake. In this case I decided to prepare three different, yet simple toppings.

From left to right:

  • The same frosting I used for the Strawberry Shortcake.
  • Cinnammon-Sugar (and a small touch of nutmeg).
  • And last but not least, Maple mixed with butter.

Muffin-Doughnut? Munut? Doughffin? I can't think of a good name for this strange concoction, but there is one thin I can confirm, they tasted super great :3 I served them for breakfast this morning, and everyone loved them!
