Wanna get lunch at UH? There used to be two main places to go, the University Center and the University Center Satellite. The former is now closed for renovations, and the latter is overcrowded severely as a result. To alleviate the congestion and angry student complaints, UH made a pact with the Houston Food Truck Fleet. Four trucks come out every day to serve lunch and snacks to the hungry population, all with high quality food. My favorite truck is the Waffle Bus, and they serve, you guessed it, waffles.

Here's the menu. You get savory or sweet waffles, and waffle fries. They even have special waffle fry sliders you can get, where the buns are replaced by giant waffle fries, rendering it insanely difficult to eat without making a mess, but incredibly tasty all the same. The savory options are burgers, fried chicken and salmon, and the sweet options are anything from strawberries and cream to Nutella.

My personal favorite is the salmon waffle sandwich. It's got smoked salmon, spinach, tomatoes, cracked black pepper, lemon, dill, capers and cream cheese on it, and it's heavenly. Let's take a closer look at that interior, shall we?

Unf, look at that salmon. So perfect. All of the flavors balance together really well, with the savory Belgian waffles completing the whole flavor set. If you're ever in Houston, I highly recommend finding these guys around town or on campus and buying one of these. It's great for a long day of studying or for grabbing to go.
